Suji,Gur and Coconut Ladoo or Laddu Recipe in Assamese language. Today, I am sharing a delicious, quick, and easy Ladoo recipe made using Suji (semolina), dry coconut, and jaggery (gur). These sweet treats take very little time to prepare, yield about 20 ladoos, and can be easily stored for up to 20 days, making them perfect for festivals.
Step-by-step guide to making the Suji, Coconut, and Jaggery Ladoos:
1. *Prepare the Suji:* If your suji (semolina) is coarse, pulse it briefly in a mixer grinder to make it fine.
2. *Roast the Suji:* Heat 3 tablespoons of refined oil or ghee in a pan and roast 1.5 cups of suji on a low flame for 10-12 minutes until it turns slightly red and releases a roasted aroma.
3. *Add Mix-ins:* Add the chopped cashew nuts and 1/2 cup dry coconut powder to the pan. Roast for an additional 2-3 minutes, then transfer the mixture to a bowl to cool.
4. *Make Jaggery Syrup:* In a saucepan, boil 1 cup of chopped jaggery with slightly less than 1/2 cup of water for 3-4 minutes. The syrup should be sticky but should not form a thick string.
5. *Combine Ingredients:* Strain the hot jaggery syrup directly into the cooled suji mixture and add the crushed cardamom. Mix thoroughly using a spoon.
6. *Rest the Mixture:* Cover the bowl and let the mixture rest for exactly 2 minutes.
7. *Shape the Ladoos:* Grease your hands with a little ghee and take small portions of the warm mixture to roll into round shapes. If the mixture is too dry to bind, sprinkle a little milk or melted ghee over it to help form the ladoos.
Quick Tips for the Perfect Ladoo:
• If your suji is too thick/coarse, pulse it in a mixer grinder to make it fine.
• Roast the suji in oil or ghee on a low flame for 10-12 minutes until it gets a slightly red color and releases a nice roasted aroma.
• Make sure your jaggery syrup is just sticky and doesn't form a thick string. Always strain the hot syrup when adding it to the suji mixture.
• Rest the covered mixture for 2 minutes before shaping. Apply ghee to your hands to easily roll the mixture into round shapes.
• If the mixture is too dry and breaks while shaping the ladoos, sprinkle a little milk or ghee to help bind it.
