Got curious about Russian food this week and ended up doing research into Borscht. Here's everything I learned. Learn how you too can make Borscht. It's easier than you think.
Description of the Dish:
Borscht is a traditional Ukrainian soup famous for its bright red color. This more well known traditional Russian version may taste rich and flavorful, but it’s actually incredibly healthy. It’s filled with cheap and healthy vegetables. If you find that the stock is still lacking in flavor for whatever reason, however, don't hesitate to add a bouillon cube to the water while adjusting your seasonings.

Recipe:
Ingredients:
3 large carrots, grated or diced
1 large sweet onion, diced
3 large or 8 small beets, peeled and diced or grated
1/2 head cabbage, julienned (cut into quarters, remove core from each base w/ diagonal cut, cut diagonally along the tip)
4-6 stalks of celery
1-2 large or 3-4 small potatoes, peeled and diced
3 beef soup pieces (or beef on the bone)
Approximately 6 pork sausages (medium length)
4-5 bay leaves
Parsley and salt (to taste)
1 cup vinegar (optional, adjust based on taste a little at a time)
1Tbsp of minced garlic (optional)
8oz can of tomato sauce, 1 tbsp of ketchup, or 2 diced tomatoes
Instructions:
1. Add all your meat or meats and bay leaves and some boxed stock to your pan and bring the pot to a boil before having it simmer on low for a minimum of 30 minutes while you pan fry your carrots, celery, and onion. A longer simmer will equal a deeper depth of flavor so let your stock simmer as long as you are able or willing for the best result.
2. Wait until your onions have turned translucent and browned before adding a small can of tomato sauce, 2 Tbsp of ketchup, or 2 peeled tomatoes and cook over low-medium heat for 15-20 minutes to concentrate the flavor.
3. Strain your stock to remove the bones, bay leaves, cartilage, and foam from your stock.
4. Add your simmered veggies from your pan and your prepped potatoes, beets, and cabbage to your pot, as well as 1Tbsp of minced garlic (if desired) and simmer for one hour.
5. Season by adding, salt, pepper, vinegar, or other spices to taste.
6. Serve with dollop of sour cream, plain yogurt, or mayonnaise depending on your preferred topping. Then, add parsley over the top for garnish.
