Everyone says the 1906 Pure Food and Drug Act destroyed Heinz’s rivals by banning a chemical preservative. That is not what the law actually did. In this video, we uncover how a single label changed the ketchup industry.
Ketchup did not begin with tomatoes. It began as fermented fish sauce, travelled from Roman garum workshops to Southeast Asian ports, turned into mushroom and walnut sauces in English kitchens, and was even sold as medicine in 1830s America. Then came kitchen-scrap ketchup, a bankrupt horseradish seller named Henry J. Heinz, a clear glass bottle, and a number that never counted anything real.
In this video you will discover:
How Roman garum led to the word “ketchup”
Why tomatoes beat mushrooms, walnuts, and oysters (hint: umami)
When ketchup was sold as a miracle cure
What was really hiding in opaque ketchup bottles
What the Pure Food and Drug Act did, and what it did not do
How a label gave Heinz the spotlight
The truth behind the “57 Varieties” slogan
The science of why ketchup will not leave the bottle
