Homemade Yeast Rolls Dissolve: 2 packages dry yeast (4 1/2 teaspoons) 1/2 cup sugar 2 cups lukewarm water (approximately 105°) Let this mixture ”rest” while preparing the next four ingredients. The yeast should activate and foam. Add: 1 beaten egg 6 Tablespoons lard, melted 5 1/2 cups all-purpose flour 1 teaspoon salt Using a dough hook on the mixer, mix until all the flour is incorporated, and the dough pulls away from the sides of the mixing bowl. Let the dough knead for about 5 minutes. Put the dough in a different large oiled bowl. Flip the dough over so that all sides will be oiled. Cover with a clean piece of plastic wrap and place in a warm spot to rise. We turned on the light in the oven and set the bowl in the oven. DO NOT turn on the oven. The heat from the light bulb is enough to make the dough rise. Leave the dough there for 1 - 2 hours or until doubled in size. Flour the surface you’re going to work the dough on. Spread out the dough to about 1/2 inch thickness. Create dough balls and place in a well greased pan. We returned these dough balls to the oven with just the light on for another 20 -30 minutes to allow the rolls to rise. Preheat oven to 375°. Bake until browned, approximately 20 minutes.
