• Don’t overcrowd the bag
• Don’t sear immediately after the water bath
• Don’t skip thoroughly drying the meat
• Don’t assume cooking a steak longer always improves its texture

• Cook sous vide directly from frozen
• Season your meat ahead of time
• Use finishing salt after cooking
• Plan longer sous vide cooks in advance
