Japan is developing coffee that contains no coffee beans.
Coca Cola, Asahi, and Ajinomoto are taking different approaches to recreate coffee's taste aroma, and caffeine as climate change and rising prices put pressure on global coffee supplies. Arabica prices hit a record $4.32 per pound in 2025, while up to half of today's suitable growing land could become unsuitable by 2050.
But replacing coffee is harder than replacing caffeine. Roasted coffee contains hundreds of aroma compounds, making its distinctive flavor extremely difficult to reproduce
This may not replace your morning coffee maker-but it could create an entirely new category of coffee-free drinks and change how the world gets its caffeine.
