This video explains why almost every pan contains it, where the fear came from, and what the measurable issue actually is. We start with conductivity, because that is the entire case for the metal. Copper runs around four hundred watts per metre kelvin, aluminium around two hundred and five, iron roughly eighty, and stainless steel only about fifteen to twenty. A pan made of stainless alone develops a hot ring over the burner and burns whatever sits on it, which is why clad cookware exists: stainless outside for the surface, aluminium inside to move the heat. Then the fear. Animal experiments in nineteen sixty five suggested a possible link between aluminium and Alzheimer's disease, and that finding reached kitchens long before the follow up work was finished. By the nineteen nineties Alzheimer's Research UK had reviewed the evidence across thousands of cases and found no convincing link to normal dietary exposure, and in two thousand and eight EFSA reached the same conclusion. Then the part that is real: migration. EFSA set a tolerable weekly intake of one milligram per kilogram of body weight per week in two thousand and six, which is seventy milligrams a week for a seventy kilogram adult, and the Council of Europe set a release limit of five milligrams per kilogram of food in two thousand and thirteen. Acidity, salt, long cooking times and a scratched surface all increase migration, which is exactly what anodising addresses.
