How 150 KG of Pork Skin Becomes Thailand’s Crispiest Street Food

Charcoal grilled chicken in Bangkok, Thailand — around 100 whole chickens a day, up to 300 on festival days, roasted on rotating spits over open charcoal at a 20-year-old street stall in Min Buri. Known locally as Kai Yang (ไก่ย่าง), this is northeastern Thai grilled chicken. The sides are Som Tam (green papaya salad), Nam Tok Moo (grilled pork neck salad) and Khao Niew (sticky rice) — the standard meal across Isan, Thailand's northeast. The fire is lit at 7 a.m. for a 9 a.m. opening, and every batch takes over an hour, turning slowly above the coals until the fat renders out and the skin goes golden and crisp. The birds are seasoned and left to marinate overnight, with the marinade worked into the cavity as well as the skin. A normal weekday runs through 100 to 120 chickens; holidays and festivals can reach 300. What makes this stall unusual is not only the cooking. It is how it refuses to operate. No delivery apps — the owner used them once and stopped, because platform fees push the price up for her regulars. No tables, no chairs, no plates to wash. Everything is takeaway, packed hot straight off the grill. Customers who cannot come themselves hire a motorcycle taxi and pay on arrival. The owner is from Pathum Rat in Roi Et province and came to Bangkok by way of Korat.
