Recipe:
Yudane:
Bread Flour 25g
Boiled Water 25g
Sweet Stiff Starter:
Water 30ml
Caster Sugar 10g
Active Starter 20g
Bread Flour 60g
Main dough:
Water 50ml
(※If you're unsure, start with 30ml and add more bit by bit, depending on how your flour absorbs it)
Milk 125g
(※Use room temperature water/milk on warm days. If it’s cold, use lukewarm water/milk instead)
Caster Sugar 10g
Honey 15g
Bread Flour 230g (I used Very Strong Canadian White Bread Flour with a protein of 14.6%)
Salt 5g
All Sweet Stiff Starter
All Yudane
Unsalted butter(room temperature) 35g
Baking time
190°C Bake for 35–40 minutes
(As ovens vary, you may need to adjust the temperature for your own oven)
