This is a case study from the Food EDU course, Food Quality and Planetary Health. Access the full course here, on the American Heart Association Professional Education Hub: https://education.heart.org/productde... This case study examines food quality as a multidimensional concept—including nutrition, sustainability, and cultural meaning—through Indigenous food systems in Ghana. Amid shifts toward processed foods and unsustainable agriculture, it highlights how protecting traditional crops and practices can improve nutrition, health, and food system resilience. Food EDU is facilitated by the American Heart Association and the Alliance of Bioversity and CIAT as co-secretariats of The Periodic Table of Food Initiative (PTFI).
