Try this easy recipe and enjoy the taste of fresh homemade Kalakand with your family. 💚🤍 If you enjoy this recipe, please Like, Share and Subscribe! ❤️ 🍬 Plain Kalakand with Pista Garnish 🥛 Ingredients 2 litres full-fat milk ½ cup fresh lemon juice mixed with ½ cup water ¾ cup sugar (adjust to taste) ½ tsp cardamom powder — optional 2–3 tbsp finely chopped pistachios for garnish 1 tsp ghee for greasing the tray 👩‍🍳 Method 1. Make fresh paneer (chhena) Boil 1 litre milk. Lower the flame and gradually add diluted lemon juice while stirring. Once the milk curdles, switch off the heat. Strain through a muslin cloth. Rinse the chhena with cold water to remove the lemon taste. Squeeze gently—keep the chhena slightly moist. Do not make it completely dry. 2. Make reduced milk In a wide heavy-bottom pan, add the remaining 1 litre milk. Cook on medium-low heat, stirring and scraping the sides frequently. Reduce it until it becomes thick and creamy, with roughly one-third of the original quantity remaining. 3. Make the Kalakand Add the moist crumbled chhena to the reduced milk. Mix gently and cook on low-medium heat. Add the sugar and continue stirring. Cook until the mixture becomes thick, moist, and grainy. Add cardamom powder if using. Do not overcook—Kalakand should remain soft and slightly moist. 4. Set Grease a tray with a little ghee. Transfer the Kalakand mixture and spread gently. Do not press it too hard. Sprinkle chopped pista generously on top. Allow it to cool, then refrigerate for 1–2 hours. Cut into neat squares and serve.
