Kadhi Pakora Recipe / Delicious Punjabi Style Kadhi / Perfect Kadhi Pakora / Spicy & Creamy Kadhi # Kadhi Pakora – Important Tips Use slightly sour curd for the best flavor. Blend or whisk the curd and besan well to avoid lumps. Mix the spices with a little water before adding them to the pan so they don’t burn. Use hot/boiling water when making the kadhi. Keep an eye on the kadhi when it starts boiling, as it can overflow quickly. After the first boil, cook the kadhi on low heat for 1–1¼ hours for the best taste. Whisk the pakora batter well, about 50–60 strokes in one direction, to make soft and fluffy pakoras. Let the pakora batter rest for 10 minutes before frying. Fry the pakoras on medium heat until golden and cooked through. After adding the pakoras to the kadhi, cook for another 5–7 minutes on low heat. If the kadhi becomes too thick, adjust the consistency with hot/boiling water only. Add the final tadka (tempering) for extra flavor and aroma.
