Ezekiel bread is sold today as a health food. In the Bible, it was famine bread — a siege ration God dictated to a prophet, ingredient by ingredient, weighed to the gram. This is the chapter nobody reads on the bread aisle. God told the prophet Ezekiel to draw Jerusalem on a clay brick, lay siege to his own drawing, and lie down beside it — 390 days on his left side, forty more on his right. His food for those fourteen months: one small loaf a day, about 230 grams, baked from the six ingredients God named Himself — wheat, barley, beans, lentils, millet and spelt (the "fitches" of the King James) — with about two and a half cups of water, measured to the line. Not a blessing. A living picture of a city about to starve. And yet the bottom of six jars turned out to be extraordinary. Grain alone is short of one building block the body cannot make for itself; beans and lentils carry exactly that one, and lack another the grains supply. Ground together in one vessel, the six hold all nine essential amino acids — complete by composition, in a century with no word for protein. We also look at what modern milling removes from wheat, and close with one honest note: the sprouted-grain loaves sold with this verse printed on the bag are a modern method.
