Pan-seared New Zealand King Salmon served in a rich golden coconut sauce with curry powder, garlic, onion, lemon and kale. The salmon is first seared until golden, then finished gently in the sauce so it stays tender and full of flavour. Simple ingredients, a little patience, and dinner is ready. Recipe Serves 2 • 2 New Zealand King Salmon fillets • ½ onion, chopped • 3 cloves garlic, chopped • A handful of kale, chopped • 1 can coconut milk (about 400 ml) • 2 tsp curry powder • ½ lemon • Butter • Extra virgin olive oil • Salt Season the salmon with salt. Pan-sear over low heat for about 3–4 minutes per side. For thicker fillets, sear the sides for an extra 30 seconds. In a separate pan, melt the butter over low heat. Add the onion and garlic and cook until fragrant. Add the curry powder, coconut milk and salt. Squeeze in the juice of half a lemon, then add the kale.
