Sugar-free, high-protein Moong Dal Payasam. It’s naturally sweetened with dates, rich in protein, and perfect for Ganesh Chaturthi, Onam, or any celebration.
· Moong dal (split yellow mung): 150 g (about 1 cup)
· Dates (seedless or deseeded): 80 g
· Milk: 700 ml (2 cups) + extra as needed to adjust consistency
· Cardamom (elaichi) powder: 1/4 teaspoon
· Ghee: 1 teaspoon
· Cashews (kaju): 5–6, halved
· Almonds (badam): 5–6, sliced
· Saffron (kesar): 8–10 strands (optional)
• Deseed dates and soak in hot milk for 1–2 hours (add saffron if using).
• Dry-roast moong dal on low for 5–6 minutes.
• Rinse 2–3 times, pressure cook with 1 cup water (3–4 whistles) or Instant Pot 6–7 min, NPR 10 min.
• Blend-soaked dates with the milk into a smooth puree.
• Lightly mash cooked dal; add date-milk puree.
• Add remaining milk cardamom (and saffron if not added). Simmer gently 5–8 minutes; don’t boil hard.
• In 1 tsp ghee, roast cashews and almonds till golden; add raisins for 30–45 seconds.
• Mix in half the nuts; garnish with the rest and saffron.
• Serve warm or enjoy at room temperature/chilled.
