A single adult hippo produces up to a thousand pounds of edible meat — more than almost anything else on the African continent. And yet you've never seen it on a menu, never eaten it, and probably never even thought about it. The real reason has nothing to do with taste. And in 1910, the United States Congress almost made hippo the next mainstream American meat.
