This incredible pizza sandwich was created in Gragnano, just outside Naples, when pizza maker Giuseppe Mascolo folded pizza dough into a half-moon and baked it empty until it puffed up. Today, I’m making a version inspired by Evan Funke’s La Mortazza from Mother Wolf in Los Angeles. The dough is crisp, chewy, and light, then stuffed with whipped lemon ricotta, folded mortadella, crunchy pistachios, olive oil, and flaky salt.
