They buy cherry from farms around Panama, drive it 7 to 8 hours from Boquete in a refrigerated truck, and process it in the middle of Panama City, in a warehouse they share with their beer brewery. In Panama the most prized coffees are almost always processed by whoever grew them. Lost Origin split those two things apart. This is the first time I've seen what that looks like up close. Franz walked me through the whole thing. The nano wet mill they built themselves. Why the cherry has to stay cold from the moment it's picked. The drying racks, which were made for drying flower and apparently work perfectly. And yes, the coffee ships in pizza boxes. I've wanted to visit for three years and always passed through on the way to Boquete. And finally I got to.
