Crispy & Khasta Aloo Samosa 🥟 Crispy, flaky and perfectly khasta samosas filled with a deliciously chatpati aloo-matar filling. The secret is the right amount of moin, a tight dough, and frying the samosas slowly on low flame. ❤️ 📝 Ingredients: 🥟 For the Dough 2 Cups Maida (All-Purpose Flour) 1 Tbsp Semolina (Rawa) 1 Tsp Crushed Ajwain Pinch of Salt 3 Tbsp Ghee Water as required 🌶️ For the Filling Coarse Spice Mix: ¾ Tbsp Fennel Seeds (Saunf) ¾ Tbsp Cumin Seeds (Zeera) 1 Tbsp Coriander Seeds (Dhaniya) Green Chutney: 5 Garlic Cloves Small Piece of Ginger 8–10 Green Chillies Water as required Other Ingredients: 7–8 Medium Boiled Potatoes, chopped ¼ Cup Boiled Green Peas 1 Tsp Chaat Masala ½ Tsp Black Pepper Powder Roasted Kasuri Methi Chopped Coriander Leaves Oil for frying 👩‍🍳 Method Prepare a tight dough and rest for 15 minutes. Coarsely grind the spices and prepare the green chutney. Sauté the spices and chutney, then add potatoes, peas and remaining spices. Roast on high flame and lightly mash the potatoes. Cool the filling completely. Roll the dough into thin sheets, cut into halves, shape the samosas and fill them. Seal properly and fry on low flame until lightly golden. Then increase the flame and fry until golden brown, crispy and khasta.
