Pakora Kadhi Recipe
Ingredients For Kadhi:
Yogurt — 500 g
Onion 1 Medium
Gram flour (Besan) — ¾ cup, roasted & sifted
Turmeric powder — 2 tsp
Salt — 2 tsp or to taste
Water — 6 cups
Cooking oil — 2 tbsp
Ginger garlic — 1 tbsp, crushed
Green chili paste — 7–8 tbsp
Cumin seeds — ½ tbsp, crushed
Water — 1–2 cups, as required
For Pakoras:
Onion — 2 medium, sliced
Green chilies — 2, chopped
Potato — 1 large, grated or finely chopped
Spinach — 1 cup, chopped
Fresh coriander — 1 handful, chopped
Salt — 1 tsp or to taste
Coriander seeds — ½ tbsp, roasted & crushed
Cumin seeds — 1 tsp, roasted & crushed
Red chili powder — 1 tsp or to taste
Gram flour (Besan) — 1½ cups
Water — ¼ cup or as required
Cooking oil — for frying
For Tadka:
Cooking oil — ½ cup
Onion — 1 medium, sliced
Button red chilies — 7–8
Cumin seeds — 1 tsp
Method:
Prepare Kadhi:
In a bowl, add yogurt and sifted roasted gram flour.
Add turmeric powder, salt and 6 cups of water. Whisk well until smooth.
Heat 2 tbsp oil in a pot.
Add sliced onion and sauté . Add crushed ginger garlic Sauté until fragrant.
Add green chili paste and cook for 4–5 minutes.
Add the prepared yogurt mixture and bring it to a boil, whisking continuously.
Cover and cook on low heat for 1½ hours, stirring occasionally. Add 1–2 cups water as required to adjust the consistency.
Prepare Pakoras:
In a bowl, add onion, potato, spinach, green chilies and fresh coriander.
Add salt, roasted coriander seeds, roasted cumin seeds and red chili powder. Mix well.
Cover and let it rest for 15 minutes.
Add gram flour and mix well.
Gradually add water and mix until you get a thick batter.
Heat cooking oil in a wok.
Drop spoonfuls of batter into the hot oil and fry on medium heat until golden brown.
Add the hot fried pakoras to the prepared kadhi.
Mix gently, cover and cook on low heat for 5–6 minutes.
Prepare Tadka:
Heat ½ cup oil in a small pan.
Add sliced onion and fry on medium heat until light golden.
Add button red chilies and cumin seeds.
Fry for a few seconds, then pour the hot tadka over the kadhi.
Serving 🍚:
Serve hot Pakora Kadhi with fragrant Zeera Rice.
Tip: Add the pakoras while they are still hot so they absorb the kadhi beautifully.
