Deep in the mountains of Miyazaki, Japan, traditional Binchotan charcoal making begins before sunrise.
At 5:00 AM, we open the kiln and begin the final stages of carbonization.
Over the next four hours, we carefully manage the fire, add fuel, and monitor the exhaust gas temperature to determine how the charcoal is progressing.
The process ends with sealing the kiln opening using clay.
This is the real work behind Japanese Binchotan charcoal — a traditional craft that requires experience, patience, and an understanding of fire.
In this episode:
Opening the kiln at 5:00 AM
Adding fuel and managing the fire
Measuring exhaust gas temperature
Monitoring the carbonization process
Sealing the kiln opening
No factory production. No shortcuts. Just traditional Japanese charcoal making.
