Viral Lauki Noodles 🥒🍜 — a delicious way to make lauki exciting! In today’s LIVE, I made these colourful and flavourful lauki noodles with lots of vegetables and a simple homemade peanut-butter sauce. I made this especially with Aadya in mind, because I wanted to turn lauki into something fun and different for her. ❤️ They’re easy to make, loaded with vegetables and a great option when you want something lighter but still delicious. 🥒 LAUKI NOODLES RECIPE For the Lauki Noodles 1 medium lauki (bottle gourd) Salt, to taste For the Stir-Fry 1 tbsp oil 1 tsp butter/ghee 1 tsp chopped garlic 1 medium onion, sliced 1 carrot, julienned ½ zucchini, julienned 1 cup bell peppers/capsicum, sliced Salt, to taste Black pepper Coriander powder Jeera (cumin) powder Garam masala For the Sauce 1 tbsp homemade peanut butter 1 tsp soy sauce A very small amount of vinegar 1 tsp sesame seeds METHOD 👩🏻‍🍳 METHOD 1. Make noodles from the lauki using a spiralizer, noodle maker or a simple peeler. 2. Add a little salt, mix well and keep the lauki noodles aside for about 10 minutes. 3. Heat oil with a little butter/ghee in a pan. 4. Add chopped garlic and sauté for a few seconds. 5. Add sliced onion and cook until slightly translucent. 6. Add the vegetables — carrots, zucchini and bell peppers/capsicum. 7. Cook the vegetables for a few minutes, keeping them slightly crunchy. 8. Add salt, black pepper, coriander powder, jeera powder and garam masala. Mix well. 9. Squeeze out the excess water from the lauki noodles and add them to the vegetables. Cook for a few minutes until the lauki is properly cooked and its raw smell and excess moisture are gone. 10. Meanwhile, prepare the sauce by mixing peanut butter, soy sauce, a tiny amount of vinegar, sesame seeds and a little water. 11. Add the sauce to the pan and toss everything together. 12.
