This is such a fun recipe when you’re craving something sweet but don’t want to wait for a whole batch of cookies to bake.
CRISPY WAFFLE COOKIES
Cook Time: 2–3 minutes per batch
INGREDIENTS
• 1 stick unsalted butter, melted
• ½ cup (100 g) granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 cup all-purpose flour
• ¼ tsp salt
• ¼ tsp baking powder
INSTRUCTIONS
1. Preheat the waffle maker. Let it get fully hot. Lightly grease it if it isn't nonstick.
2. Make the batter. Whisk together the melted butter and sugar. Add the egg and vanilla and whisk until smooth.
3. Add the dry ingredients. Stir in the flour, baking powder, and salt until a dough forms. Chill in the refrigerator for 15–20 minutes for a firmer cookie. This step is optional.
4. Cook the cookies. Divide the dough into 4 large balls for big cookies, or use about 1 tablespoon of dough each for around 10 smaller cookies. Place them in the waffle maker, close, and cook for approximately 2–3 minutes, depending on your machine.
For extra-crispy cookies, cook a little longer until deeply golden around the edges.
5. Cool until crisp. Carefully transfer the cookies to a wire rack in a single layer. They may feel slightly soft at first but will become crispier as they cool.
6. Finish. Leave uncovered until completely cool. Dust with powdered sugar if you'd like. Enjoy!
