These are easy meals for two, cooked in one pot a night with nothing else to scrub, and I bet Walt the old roaster I could keep it up for five nights. Whether you're cooking for one or for two, I'll show you how I brown, simmer and freeze it all in the same pot, so the week ends with a full freezer and an empty sink.
That big speckled roaster in my basement has had last November's gravy baked onto it for nearly a year, so I made Walt a bet. Five suppers, Monday to Friday, one pot a night and nothing else dirty. If I slip even once, I scrub it. My two biggest buys were a four-pound chicken at about $2.06 a pound and a pound of dried beans at about $1.69.
In this video:
✓ How I cook five hot suppers for two with one pot, one spoon, one knife and one board
✓ The line on the back of Mother's recipe card that does half the washing for you
✓ My soak-while-you-eat trick so the pan never fights back
✓ How I cool, portion and label leftovers for the freezer, quickly and safely
✓ How I reheat soup straight from frozen to a safe 165°F
✓ What the chicken and beans really cost, and who ended up scrubbing the roaster
A note on safety: get cooked food into the fridge or freezer within two hours (one hour if your kitchen is above 90°F), keep your fridge at 40°F or colder, and reheat leftovers until they read 165°F in the middle. The prices are what I found for my week, and they vary depending on where you live.
