Bike rack mods to mount military surplus bread bags as quick-release panniers - first off-road test

I wanted a rugged, military look for my bike luggage, so I sourced a pair of military surplus Polish bread bags to use as panniers. I've now completed the custom aluminium mounting brackets on both sides of the rack, including secure turn-button fasteners. In this short video, I give the system its first proper off-road test.
