Cooking on a fixed income shouldn’t prevent you from trying new, flavorful food! Learning new ways to cook with food bank staples is my way to make meal times special Right now, adding tofu to our meals is honestly the best thing in the budget — cheaper per serving than almost any meat, and it actually tastes incredible when you get it crispy. Believe it or not but this entire block was only $2.42!
This ginger crispy tofu is my go-to: it's made almost entirely from food bank staples, it's filling, and it costs pennies per plate. If you're trying to eat well without spending a lot, this one's for you.
Ingredients:
🧈 A block of firm tofu (the cheap kind — it works perfectly)
🫚 Ground ginger
🧄 Garlic, onion, carrots, peppers, or whatever you have on hand
🌾 Rice
Budget-friendly pantry staples for the sauce (soy sauce, honey, vinegar)
It's crispy, it's saucy, and it's genuinely one of the most overlooked cheap proteins. I use tofu way more often now because it stretches a meal and keeps the grocery bill down — and I promise it doesn't have to be boring!
