In this episode, we are cooking a traditional Kanda Dumpa Pulusu (elephant foot Curry) right in the middle of a peaceful Godavari village, under the open sky, with chirping birds and cool weather all around.
We use a mud stove (kattela poyyi) and peanut oil, giving the curry that authentic smoky village flavor that no modern kitchen can match.
1. Preparation:
Freshly harvested sweet potatoes (kanda dumpa) are peeled, cut into pieces, and soaked in salt water to remove excess starch and avoid itching.
2. Masala base:
In a mud pot (matti daka) on a wood fire, we heat peanut oil, then add:
Fenugreek seeds (menthulu)
Mustard seeds (aavalu)
Split urad dal (minapappu)
Cumin seeds (jeelakarra)
Dry red chilies (endumirchi)
Crushed garlic cloves (vellulli)
Curry leaves (karivepaku)
These ingredients release a wonderful aroma, forming the perfect tempering.
3. Adding onions & chilies:
A handful of country onions (natu ullipaya) and green chilies (pachimichi) are added and fried till golden brown.
4. Cooking sweet potatoes:
Add soaked kanda dumpa pieces, sauté for 5 minutes, then cover and cook on low flame for about 10 minutes to soften.
5. Seasoning:
Mix in salt, red chili powder, turmeric powder, and stir well.
Pour water just enough to cover the pieces and bring it to a boil.
6. Tangy twist:
Add tamarind juice (chintapandu rasam) and a small piece of jaggery (bellam) to balance the spicy, sour, and sweet flavors.
7. Finishing touch:
Once the pulusu thickens and oil starts to float, sprinkle fresh coriander leaves (kothimira) and remove from fire.
The aroma, taste, and texture of this village-style sweet potato curry are simply unbeatable!
This dish goes perfectly with steamed rice or jowar roti, and it captures the true soul of Andhra rural cooking — simple, natural, and full of heart.
