✓ It is long overdue that I paid another visit to Coconut Master Benny's "OSU Coconuts" stall (the last time I saw him was in 2016 when he was based in Camden Lock Market where he used to serve up his Green Coconut Water).

The Traditional Caribbean Roti which gets served up is a Dhal Puri Roti made with Spelt Flour.
The Trinidadian Roti is filled with:
Homemade Chickpea Curry (similar to Indian Chana Masala)
Spiced Pumpkin Curry
Grilled Plantain seasoned with Cinnamon Powder and Tamarind Sauce
A touch of home-made Scotch Bonnet Chilli Sauce
Avocado Pear (optional)
There are 2 Sweet Coconut Based Pancakes on the menu:
BERRY MAID:
A stack of 4 Coconut base pancakes
Fresh Berry Coulis
Refined Sugar-Free Coconut Caramel Sauce
BANANA CHOC:
A stack of 4 Coconut base pancakes
Grilled Burro Banana
Drizzled with homemade Raw Chocolate Sauce (refined sugar free)
TRINI CHANA RECIPE INGREDIENTS:
200g Soaked Chickpeas in bay-leaf and Himalayan Salt
Spring Onion
Cumin Seeds
Cumin powder
Good quality Curry Powder
2 sticks of Cinnamon
3 sprigs of Thyme
Red Split Peas (ground up in pestle and mortar or coffee grinder)
Turmeric powder
Black pepper
Can be served with Roti or Rice
METHOD:
Fry off Spring Onion until translucent then add in fresh dry seasoning
add in Chickpeas and cook down in spring water add in ground split peas to make creamy consistency (you can add as a thickening agent ground Irish Moss also add in Cinnamon Sticks towards end of process to give sweet after taste.
