Today we're making UP Style Kadhi, a traditional yoghurt and besan-based curry served with soft, flavourful besan dumplings. The kadhi is slowly cooked for almost an hour to develop a rich, tangy flavour, then finished with a fragrant tadka of mustard oil, cumin, mustard seeds, hing, garlic, curry leaves and whole red chillies. The fried dumplings are soaked before being added to the kadhi, making them soft and delicious. Serve this comforting kadhi with steamed rice, jeera rice or roti.
