Fats and oils are indispensable in leather dressing. Here is a basic tutorial on rendering fats for industrial uses such as dressing leather. Rendering fats for consumption requires more care and will be covered in the future. Fat should be cut small for fast rendering and cooked at a moderate to low heat to prevent burning. once most of the fat is melted out of the pieces, it is strained and pressed to remove the liquid oil. The fat can be stored in jars for later use. The leftover pieces are called cracklin's.
