We spotted colorful birds in the Mindo cloud forest, biked through Cotopaxi National Park, and went white-water rafting in Baños. Along the way, we tried the famous bizcochos in Cayambe, explored the Otavalo market, and stood at the Middle of the World. Every day brought something new — a mix of nature, culture, and adventure.
