Why are your meatballs hard and dry? This easy Sicilian meatballs recipe uses stale bread soaked in milk for soft, tender, juicy homemade Italian meatballs. One pound of meat makes 18 budget meatballs, about $2.17 a plate. 📖 On page 97 of my cookbook (PDF): https://cookthesicilianway.com 1 lb ground beef and pork · 3 slices stale bread · 6 tbsp milk · 1 egg · 1/3 cup pecorino · 2 garlic cloves · parsley and mint · 1 tsp salt · 3 tbsp olive oil · tomato sauce 1. Mash the bread and milk into a paste. Rest 5 minutes. 2. Mix in the egg, cheese, garlic, herbs, salt and pepper. 3. Add the meat and mix gently with your fingers. 4. Roll golf-ball meatballs with wet hands. 5. Brown in olive oil, 6–8 minutes. 6. Simmer gently in tomato sauce 30–45 minutes, to 160°F inside.
