Hello friends !
How are we all doing ?
I am coming back this week with a deep dive into Fashion week !
I wanted to take you with me during this crazy week as I attended events, castings and had to move apartments on Tuesday as well !
I also wanted to share my routines that keep me stable during this time, which can be stressful on all aspects.
Extra focusing on skincare, nourishment, rest, recovery and connection.
I will link all of the skin-and-hair care products below, as well as my dinner bowl recipe :)

ROASTED VEGGIE AND MINCE BOWL
Ingredients (for 3 small portions)
1 butternut, washed and cubed
1 sweet potato, washed and cubed
2 garlic cloves, cut into small bits
1 thumb of fresh ginger, cut into small bits
300g of ground organic turkey or beef
1 bunch of broccolini stems
A handful of spinach
2 bsp of olive oil
2 tsp of chili powder
2 tsp of cumin
1/2 cup of chicken bone broth
1 tbsp of honey
Salt, pepper ++
Toppings
1/2 avocado/ squeezed lemon
1 tbsp of humous
Fresh herbs (coriander, dill,…)
1 tsp of chili oil
Preparation
Preheat the oven to 200°C.
Add the butternut and sweet potato to an oven-safe plate.
Add the cumin, chili powder, half of the garlic, half of the olive oil + salt and pepper.
Combine and bake in the oven for 30 minutes.
In the meantime, add the rest of the oil, the leftover garlic and ginger to a skillet.
Fry on medium heat until the garlic turns golden.
Add in the mince, then the bone broth, honey and lower the temperature.
Season with salt and pepper and let it simmer for 10 minutes.
Bring water to a boil, add the broccolini until nearly fork tender (approximately 4 minutes).
Season with salt and pepper then add to the skillet.
Once the meat is cooked-through, and the squash and potatoes caramelized, remove them from the oven, add 1/3 of them to a bowl, then add 1/3 of the mince mixture.
Top your bowl with the fresh herbs you like, humous, chili oil and some big salt and pepper to taste and enjoy this comforting meal !
