How to make Bannock in a Billy Can

I got my original recipe from a fellow YouTuber “Wintertrekker” Check him out! It was Wintertrekker who introduced me to the concept of kneading bannock. I have changed the recipe over the years and I have settled on two versions of my own. Here is my bannock recipe. I mix the following ingredients at home in a food processor to integrate all the lard. You can mix by hand if you want it just takes longer. Then I measure either 1 cup or 2 cup amounts (depending on the size of loaf I want to make) and put into plastic bags for the trip. You can add other ingredients like herbs, garlic, raisins etc. if you like. White Bannock 4 cups all-purpose flour 3 TBS Baking Powder ¼ cup Lard ¼ tsp salt Whole Wheat Bannock 2 cups of whole wheat flour 2 cups of all purpose 3 TBS Baking Powder ¼ cup Lard ¼ tsp salt In camp I mix in water by eye and feel till I get a sticky dough. Then I knead it for 8-10 min. before baking (depending on the size of loaf, stove and method about 25 – 35 min. They only appear to offer two sizes of baking pan a 3” and a 4”. They also offer an option of trimming the rim off of the pan (like mine). I see the prices have gone up significantly.
