Stop Making Instant Ramen Like This – Try This Japanese Trick Instead
You fill a pot with 2 cups of water, drop in the block, dump in the whole packet and stir. By the fifth bite the noodles are limp, it tastes like the packet and nothing else, and half the bowl goes down the sink. That isn't you - you did exactly what the package said. When I was a boy in Sacramento, my father came home from a long shift and never used a pot. He made his instant ramen in a small black skillet with barely any water, cracked an egg on top, and put a lid on it. What came out was shiny, the noodles clung together, and nothing was left in the pan. Years later I found out Japan has a name for it: Kujirai ramen.
I'm George Nakamura. I'm not a chef. Everything I know about cooking came from standing next to my father while he made dinner after work, for about 30 years.
In this one, my father's way in 8 steps: number 1, the right amount of water (a cup and a quarter, not 2 cups) and why you flip the block, number 2, a wide shallow skillet or a wide bowl in the microwave instead of a pot, number 3, only half the seasoning packet and what to do with the rest, number 4, the build, with dried vegetables and leftover meat cooked under the lid, number 5, the egg in a well in the noodles, number 6, the one slice of plain cheese that turns it all into a glossy sauce, number 7, scallions on top and what the whole plate costs (about 2 dollars), and number 8, the one thing my father did every single time that almost nobody does now. Under 10 minutes, one pan, stove or microwave.
Honest warnings in the video: cook the egg firm all the way through (160 degrees Fahrenheit in the yolk if you have a thermometer), especially if you're older, pregnant, or cooking for someone who gets sick easily. Poke the yolk before it goes in the microwave so it doesn't burst. And when you lift the lid, tilt it so the steam rolls away from you - steam off a skillet will burn you faster than the pan will.
Did your family make instant noodles the soup way, in a pot, or did somebody at your table do it in a pan? Tell me which one, and tell me where you grew up. I read every one.
