Stop buying bland tea-time biscuits! ☕ Crisp, flaky, and aromatic—here’s how to make authentic, super-crispy Bihari Thekua at home! 👇 If you love sweet, crunchy snacks flavored with fennel, cardamom, and coconut, this traditional recipe is an absolute game-changer. The secret to that perfect melt-in-mouth crunch? It’s all in rubbing the ghee into the flour (moyan) and frying on a patient low-medium flame! 📝 INGREDIENTS 6 cups Whole Wheat Flour (Atta / 600g) 6 tbsp Ghee (for moyan) + Ghee for deep frying 1 cup Powdered Sugar ½ cup Desiccated Coconut 2 tbsp Poppy Seeds (Khuskhus) 1 tbsp Fennel Seeds (Saunf) 1 tsp Cardamom Powder 1 tsp Black Pepper Powder Minimal Water (to bind a tight dough) 💡 QUICK METHOD 1 Mix Dry Ingredients In a large mixing bowl or wide platter (parat), combine the whole wheat flour, powdered sugar, desiccated coconut, poppy seeds, fennel seeds, cardamom powder, and black pepper powder. Mix thoroughly with your hands to distribute the aromatics evenly. 2 Incorporate Ghee (Moyan) Crucial for a flaky, melt-in-mouth texture • Pour in the 6 tbsp of ghee. Rub the ghee thoroughly into the flour mixture using your palms for 3 to 4 minutes until it turns crumble-like. • Moyan Test: Press a fistful of the mixture in your palm. If it holds shape without falling apart, the fat ratio is perfect. If it crumbles instantly, rub in 1 extra tablespoon of melted ghee. 3 Knead a Tight, Stiff Dough Use minimal water Sprinkle 1 to 2 tablespoons of water at a time onto the flour mixture. Bring the dough together until it just holds form. The dough must remain very hard, stiff, and slightly rough — a soft or smooth dough will yield chewy or soft thekuas rather than crispy ones. 4 Shape and Emboss the Thekuas • Pinch off small lemon-sized portions of dough and press them firmly between your palms to smooth out loose edges. Flatten into thick round or oval discs (approx. 1/2-inch thickness). • Press each disc onto a traditional wooden sancha (mold) to create patterns. If you do not have a mold, create leaf or line patterns using a fork, toothpick, or cookie cutter. 5 Deep Fry on Low-Medium Flame 10 to 12 minutes per batch • Heat sufficient ghee in a heavy-bottomed kadai over medium heat. Once hot, lower the flame to low-medium. Gently slide in a batch of shaped thekuas without overcrowding. • Fry slowly on low heat, flipping halfway through, until deep golden brown and cooked through to the center. Avoid high heat, which turns the outside brown while leaving the interior raw. 6 Drain, Cool, and Store Crispness develops upon cooling • Remove the thekuas using a slotted spoon and drain them on paper towels. They will feel slightly soft while hot but will turn hard and crunchy as they reach room temperature. • Allow them to cool completely before storing in an airtight container. They remain fresh for up to 3 weeks. 📌 SAVE this post for your next tea-time craving! 💬 Comment "THEKUA" and I’ll send you the exact measurements! ❤️ Share this with a friend who loves traditional snacks! #Thekua #BihariFood #TeaTimeSnacks #IndianSnacks #TraditionalRecipes #DesiGhee #HomemadeBiscuits #AttaBiscuits #CrispySnacks #EasyRecipes #RecipeReels #IndianFoodBloggers #ChhathSpecial #IndianSweetTreats
