Have you ever wondered why a French dessert looks like a bicycle wheel? 🇫🇷🚴♂️
This is the story of Paris-Brest, a legendary French pastry created in 1910 by pastry chef Louis Durand in honor of one of the most challenging bicycle races of its time: Paris–Brest–Paris.
The race began in 1891 and became a symbol of endurance, passion, and determination. Cyclists traveled more than 1,200 kilometers from Paris to Brest and back, pushing their bodies to the limit through long nights, difficult roads, and extreme conditions.
Inspired by this incredible journey, Louis Durand created a dessert shaped like a bicycle wheel. The golden ring of choux pastry represents the wheel, while the rich praline cream inside celebrates the energy and spirit of the riders who completed this legendary race.
More than 100 years later, Paris-Brest remains one of the most iconic French pastries, combining history, craftsmanship, and unforgettable flavor.
In this video, watch the beautiful process of making this timeless dessert, from the delicate choux pastry to the smooth praline filling and the final elegant presentation.
