Chisa grew up in the market, watching her mother and grandfather build the family business. Today, she works as a nakagai nin, a licensed seafood wholesaler responsible for purchasing fresh fish at auction and supplying restaurants and businesses throughout Kyoto. Every morning begins by inspecting the day's catch before contacting customers to understand exactly what they need and how much they are willing to pay. Success at a Japanese fish market is about far more than winning bids. Chisa san carefully studies market conditions, recommends the best seafood available, and builds long term relationships through trust and reliability, values she learned from her mother.
