Welcome to Indiana!
Today on Sandwich States, we're making an Indiana-inspired Pork Tenderloin Sandwich — a Midwest classic featuring a crispy, golden breaded pork cutlet served on a soft bun.
Inspired by German schnitzel, this oversized sandwich has been an Indiana favorite for generations.
We're making our version with a homemade buttermilk-style marinade, crushed saltine crackers, and a golden, crispy coating.
🥪 INGREDIENTS — 2 SANDWICHES
Pork & Marinade
2 boneless pork loin chops (about 5 oz / 150 g each)
1 cup (240 ml) whole milk
1 tbsp (15 ml) white vinegar
1 large egg
3 tbsp (24 g) all-purpose flour
Salt and black pepper, to taste
Crispy Coating
120 g (4.2 oz) crushed saltine crackers
For Frying
500 ml (2.1 cups) canola oil, or your preferred frying oil
Heat oil to approximately 355°F (180°C)
For Serving
2 hamburger buns
Lettuce
Tomato slices

Your favorite condiments
INSTRUCTIONS
1. Mix the milk and vinegar. Let sit for 10 minutes.
2. Pound the pork chops to approximately ¼ inch (6 mm) thick.
3. Combine the homemade buttermilk mixture with the egg, flour, salt, and pepper.
4. Marinate the pork in the refrigerator for 6–24 hours.
5. Coat the pork with crushed saltine crackers.
6. Heat the frying oil to approximately 355°F (180°C).
7. Fry for about 4 minutes per side, until golden brown and crispy. Cook to an internal temperature of 145°F (63°C), then rest for 3 minutes.
8. Assemble your sandwich and enjoy
