Not your fault, corazón. Nobody told you a taco is ruined before the tortilla ever touches it. ⭐ THE 7 THINGS 1. ⭐ YOUR MEAT BOILED. Pat it dry, get the pan truly hot, cook in small batches. Never a pile. 2. Skip the expensive steak. Chuck, 20–30 min in the freezer, sliced thin across the grain. 3. Salt early, lime late. Lime overnight makes the meat gray, not tender. 4. Warm every tortilla. Dry comal, 10–20 seconds a side, straight under a towel. 5. Make it smaller. About 1 1/4 oz meat and one small spoon of salsa per taco. 6. The meat waits least. Salsa, onion, lime ready first. Meat goes on last. 7. First bite with no salsa. If you can't taste the beef, fix the meat.
