📝 Half-Moon Buns
Yield: 4–6 Buns
🛒 Ingredients
Lukewarm milk: 145 ml
Honey or sugar: 1.5 tbsp
Instant yeast: 3.5 g (approx. 1 rounded teaspoon)
Cooking oil: 15 ml
Unsalted butter: 10 g (softened at room temperature)
Whole wheat flour: 106 g
All-purpose flour: 106 g
Salt: ½ tsp
Eggless Wash: 1 tbsp milk mixed with ½ tsp honey or maple syrup
👩🍳 Step-by-Step Instructions
1. Activate the Yeast:
In a small jug, stir the honey (or sugar) and instant yeast into the lukewarm milk.
Let it rest for 5–7 minutes until it becomes frothy on top.
2. Combine and Rest (Autolyse):
In a bowl, whisk together the whole wheat flour, all-purpose flour, and salt.
Pour in the yeast-milk mixture, cooking oil, and softened butter. Stir with a spatula until a rough, shaggy dough forms.
Crucial Wheat Step: Cover the bowl with a damp cloth and let it sit undisturbed for 15 minutes. This gives the coarse wheat flour time to absorb the liquids, making it significantly softer and easier to knead.
3. Knead & First Rise:
Turn the dough onto a clean surface. Knead gently for 8–10 minutes. Tip: Do not rip the dough; stretch and fold it smoothly so the wheat grains don’t cut the rising structure.
Shape into a smooth ball, place into a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour and 15 minutes (until doubled in size).
4. Shape the Half-Moons:
Gently punch down the dough. Divide it into 4 to 6 equal portions and roll each into a smooth ball.
Using a rolling pin, flatten a ball into an oval shape. Fold the oval directly in half to create the signature half-moon crease. Repeat for all pieces.
5. Second Rise:
Place the half-moons onto a baking sheet lined with parchment paper.
Cover loosely with a dry towel and let rise a second time for 25–30 minutes until puffy.
Meanwhile, preheat your oven to 180°C (350°F).
6. Wash and Bake:
Gently brush the top of each bun with your Eggless Wash mixture.
Bake for 15–20 minutes until the tops are golden brown.
Optional: Brush the tops with a tiny smear of melted butter immediately out of the oven for a bakery-soft crust. Let cool completely before slicing open.
