High-quality, mature sugarcane or palm is chosen for the process. Extraction of Juice: For sugarcane, the stalks are washed, cut into smaller pieces, and then crushed in a mill to extract the juice. The extracted juice is collected in large containers. In the case of palm sap, it's collected from the flowers of the palm tree. Clarification: The collected juice often contains impurities and is usually strained to remove any solid particles and other unwanted elements. Boiling the Juice: The clarified juice is then poured into large, shallow pans or cauldrons, commonly known as "vats" or "pans," and placed over a heat source (usually fueled by firewood or other biomass). The juice is boiled continuously in these pans. Skimming and Stirring: While boiling, impurities rise to the surface as foam or scum. This is continuously skimmed off to ensure the purity of the jaggery. The juice is also stirred intermittently to prevent it from sticking to the bottom of the pan and to ensure even boiling. Testing Consistency: As the juice thickens, its consistency changes. Traditional jaggery makers use various methods (like dropping a small amount of juice into cold water) to test the consistency and readiness of the jaggery. Molding: Once the juice reaches the desired consistency (a thick, viscous syrup), it is poured into molds. These molds can be made from various materials such as wooden trays, metal containers, or even shaped in small cones. Cooling and Solidification: After being poured into molds, the jaggery is left to cool and solidify. This may take a few hours to a day, depending on the ambient temperature and the size of the molds. Packaging: Once completely cooled and solidified, the jaggery is removed from the molds. It's then usually packed into appropriate packaging materials like sacks, boxes, or even wrapped in leaves for transportation and storage. Traditional jaggery making is a labor-intensive process that requires skill and experience to achieve the right consistency and quality. However, modern techniques have been introduced in some places to streamline the process and increase efficiency while maintaining the quality of the final product.
