Công Thức - Recipe Bánh Gối cũng là bánh Quai Vạc, bánh pate chaud, làm vỏ theo bánh Spiral Curry Puff. Cũng có thể làm vỏ tách lớp theo bánh croissant. Bánh tạo lớp giống hình vỏ sò. Nhân làm giống như chả giò. Nguyên Liệu - Ingredients: Yield 24 I/ Water dough pastry: Bột nước 300g All purpose flour - Bột mì đa dụng 130g water - Nước 70g cooking oil - Dầu ăn 1/2 tsp sea salt - Muối biển 1 Tbsp sugar (optional) - Đường II/ Butter dough pastry: Bột bơ 150g All purpose flour 10% protein 75g butter or 60g shortening III/ Fillings: nhân 150g ground pork - thịt heo xay 150g cubed shrimp - tôm cắt hạt lựu 150g taro, shredded - khoai môn xắt sợi 1 sweet onions, cubed - hành tây xắt 1/4 cup wooden ear mushroom, shredded - nấm mèo 1Tbsp minced shallot - hành tím Salt, ground black pepper, chili powder and sugar to taste Muối, tiêu, ớt màu, đường, nêm vừa miệng 2 Tbsp oil - dầu để xào nhân Cooking oil for deep frying - Dầu để chiên ngập banh Direction notes: 1/ Mix water dough. Cover, rest for 30'-1hour 2/ Mix butter dough. Cover, rest for 30'- 1hour 3/ Divide each water dough and butter dough into 2 equal parts. Then divide each part into 3 portions. Form each portion into a ball 4/ Flatten the water dough ball then wrap the butter dough ball inside. Make 6 discs. Cover, rest for 30'-1 hour 5/With rolling pin, roll out the disc to a long shape then roll up from the shorter side to form a swiss roll 6/ Turn 90 degree, roll out again, then roll up from the shorter side to form a swiss roll.
