I’m Yuki, and in this video I explore how traditional Japanese kitchens preserve food without relying on a refrigerator—or on use-by dates. By looking inside my mother’s remarkable cupboard, I began to understand that reducing food waste isn’t only about better planning; it’s about transforming food so it becomes more stable, useful, and flavorful over time.
