☕ Coffee Buns (Papparoti) — Soft, Buttery & Crispy Coffee Topping Soft, fluffy, and wonderfully aromatic Coffee Buns inspired by the classic Papparoti. 🤎 These buns are soft and buttery on the inside, with a rich coffee aroma and a delicate, crispy coffee topping on the outside. Each bun is filled with 8g of salted butter, which melts beautifully inside as it bakes. The combination of fluffy bread, warm melted salted butter, and crisp coffee topping makes every bite irresistible. ☕🧈 🍞 Bread Dough 50g butter (3½ tbsp) 70g white sugar (⅓ cup) 180ml whole milk (¾ cup) 1 large egg 370g bread flour (about 3 cups) 1 tsp instant yeast 🧈 Salted Butter Filling 8g salted butter × 12 pieces ☕ Coffee Topping — 1½ Batch 75g softened butter (5 tbsp + 1 tsp) 83g icing sugar (about ⅔ cup) 1½ egg whites 7.5g instant coffee (about 2½ tsp) 1 tsp vanilla extract 83g all-purpose flour (about ⅔ cup) 👩🏻‍🍳 Instructions 1. Make the Dough Add all the bread dough ingredients to the bowl of a stand mixer. Mix on the lowest speed for 20 minutes, or until the dough becomes smooth and elastic. 2. First Rise Remove the dough from the mixer and shape it into a smooth ball. Place it in a bowl, cover with a clean towel, and let it rest at warm room temperature for about 1 hour, or until doubled in size. 3. Divide & Rest Once the dough has doubled in size, divide it into 12 portions, about 62g each. Shape each portion into a smooth ball, cover with a towel, and let them rest for 15 minutes. 4. Fill with Salted Butter Take one dough ball and gently flatten it. Place 8g of salted butter in the center. Fold the dough around the butter and pinch the edges together firmly. Make sure the bottom seam is completely sealed so the butter stays inside during baking. Repeat with the remaining dough. 5. Second Rise Place the filled buns on a lined baking tray. Cover with a towel and let them rest for another 45 minutes, or until noticeably puffy. 6. Prepare the Coffee Topping While the buns are proofing, beat the softened butter and icing sugar until smooth and creamy. Gradually add the egg whites and mix until well combined. Add the vanilla extract and instant coffee, then mix until evenly incorporated. Add the all-purpose flour and mix just until combined. Transfer the coffee topping into a piping bag. 7. Add the Coffee Topping Once the buns have finished their second rise, pipe the coffee topping over each bun in a spiral pattern, covering the top. 8. Bake Conventional Oven: 🔥 350°F (180°C) Fan/Convection Oven: 🔥 340°F (170°C) Bake for 18–20 minutes, or until the coffee topping is golden brown and crisp. Let the buns cool slightly before serving.
