We often speak of cottage cheese and its uniqueness and delicacy.
We in the Duggar Land have for long been practising Fermented Cheese locally known as Kaladi. This delicacy originated from the far flung areas like Ramnagar Ghordi, Parts of Reasi and around Ramban. As there was surplus of Milk at these places and due to lack of transport facility and its viability, Kaladi used to be prepared by fermenting the milk and sent to the nearby markets. Presently many Halwai shops and milk vendors in Jammu are preparing Kaladi as a special item for their counters.
For preparing kaladi, ingredients required are
Kaladi. Bread slices or Bun, A pinch of salt, you can also add spices according to your taste like aamchur.chilli powder, coriander powder.
Preparation :
Heat the pan on mild flame and put a pinch of salt (u can also put a teaspoon refined oil to make dis recipe more easy) and Place Kaladi on it so that it does not stick to pan
Turn around and side by side heat the bread slices also. Then press the Kaladi a little bit till it melts and threads are formed and place in the bread slices and serve hot with tomato or hot and sweet sauce. It is a vegetarian delight. Coffee or tea can follow.
