Is this the best Italian side dish?

If you've never made Aubergine Parmigiana (Parmigiana di Melanzane) before, this is the recipe to start with! We're layering crispy fried aubergines with a rich homemade tomato sauce, loads of mozzarella, plenty of Parmesan, and baking it until it's golden, bubbling and ridiculously good. It's proper Italian comfort food. Also... Mikey the cameraman finally steps in front of the camera to show off his onion chopping skills. Turns out he's been hiding some serious knife skills from us.
