Tempering chocolate, explained: what it actually does, why the same chocolate at the same temperature can set glossy or dull, and how to temper at home by seeding. Chocolate snaps, shines and releases from a mold when its cocoa butter sets in one particular crystal form (Form V). This video shows what is happening inside the chocolate at each step of the classic melt, cool and rewarm curve, why there is a temperature you must not go back above, and a step-by-step seeding method you can follow in a home kitchen. Then: tabling, the microwave method, cocoa butter powder, how to test, and what each kind of failure usually means. Temperatures shown are Callebaut's published values for three of its own chocolates (811 dark, 823 milk, W2 white). Every chocolate has its own curve: find your maker's instructions and follow one complete method.
