Bajra (Pearl Millet) combined with fresh Green Methi (Fenugreek leaves) makes a nutritious, hearty, and aromatic snack that is perfect for cold winter evenings, rainy afternoon tea times, or picnic lunch boxes.
By sautéing the methi leaves first and combining a delicate blend of curd, sesame seeds, ajwain, and jaggery with bajra, wheat flour, and rava, these vadas turn out delightfully crispy on the outside and soft on the inside. Follow this easy step-by-step method to recreate this authentic taste at home!

INGREDIENTS (सामग्री):
• 2 cups Green Methi, हरी मेथी
• 2 cups Bajra Flour, बाजरे का आटा
• ½ cup Wheat Flour, गेहूं का आटा
• ½ cup Rava Flour, रवा का आटा
• 1 tsp Oil, तेल
• ¼ tsp Hing, हिंग
• 2 cups Green Methi, हरी मेथी
• ½ cup Curd, दहीं
• 1 tsp Oil, तेल
• ¼ tsp Turmeric, हल्दी
• ½ tsp Coriander-Cumin, धनिया-जीरा
• ½ tsp Red Chilli, लाल मिर्च
• ¼ tsp Hing, हिंग
• ½ tsp Salt, नमक
• 2 tsp Jaggery, गुड
• ¼ tsp Ajwain, अजवाइन
• 1 tsp White Sesame, सफ़ेद तिल
• ¼ tsp Saunf, सौंफ
• ⅛ tsp Baking Soda, बेकिंग सोडा
• Half a Lemon, निम्बू
• ½ cup Water, पानी
• ½ tsp Oil, तेल
METHOD / INSTRUCTIONS:
1. Sautéing Methi: Heat 1 tsp oil in a pan, add ¼ tsp hing and 2 cups cleaned, chopped green methi. Stir and sauté well until softened. Keep aside to cool.
2. Preparing Spice Mix Base: In a mixing bowl, add ½ cup curd and 1 tsp oil; whisk well. Add turmeric, coriander-cumin powder, red chilli powder, hing, salt, jaggery, ajwain, white sesame seeds, and saunf. Mix thoroughly.
3. Activating Soda: Add ⅛ tsp baking soda and juice of half a lemon. Mix well until it froths.
4. Kneading Dough: Add the sautéed methi along with Bajra flour, Wheat flour, and Rava flour. Combine everything by hand. Gradually add about ½ cup water and knead into a medium-soft dough. Finish with ½ tsp oil to smooth the dough, then let it rest covered for 10 minutes.
5. Shaping Vadas: Make small lemon-sized balls of dough. Arrange them on a clean, wet cotton cloth. Cover with the cloth and gently press flat using a flat steel cup/bowl.
6. Sesame Topping: Remove the top cloth, lightly brush each vada with water using your fingers, sprinkle white sesame seeds, and press gently so they adhere.
7. Frying: Deep-fry the vadas in hot oil over medium flame. Once they float to the top, flip periodically until they achieve a rich golden-brown, crispy exterior layer.
8. Serving: Drain excess oil and serve hot with green chutney or a steaming cup of Indian masala tea!
