There was a supper your mother could put on the table for almost nothing and still feed the whole family well. This is a warm look back at twenty-five of those forgotten poor man's meals from the 1960s, the resourceful, deeply loved food a whole generation grew up on.
From fried bologna and a pot of pinto beans and cornbread, to potato soup, salmon patties, red beans and rice on washday, milk toast, and the cornbread-and-milk supper so many of us still remember, these were the meals that carried families through the lean weeks with a little dignity to spare.
